My WOrst Nightmare

Vegan Healthy Edamame Dip
I stole this recipe off (http://closetcooking.blogspot.com).
It's sooo good and is without OIL! Amazing.
Amy, this is a great way to eat raw garlic and is something you could eat forever.
Ingredients:
1 cup edamame
1/4 cup onion
1/2 cup cilantro
1 clove garlic
1 lime (juice)
1 tablespoon miso
1 teaspoon soy sauce
1 teaspoon chili sauce

2. Drain the edamame reserving the water.
3. Mix everything in a food processor adding some of the reserved water to thin the dip to the desired consistency.

Fishy Pasta Salad (Dairy Free)
I made this delicious pasta salad yesterday! So healthy!
First I mixed these together in a bowl:
Cucumber, sesame seeds, pumpkin seeds, tinned fish (in a tomato sauce; add tom. puree otherwise), cilantro, basil, some lemon juice and some soy sauce.

Mixed em all together and added some boiled pasta:

Baking Cookies with Holly!
Holly and I made some oatmeal raisin cookies yesterday! She has a crush on the boy down the street and decided to deliver some to him, too.


Here's the recipe we used:
Oatmeal - Best Oatmeal Cookies

1 Cup butter
1 cup sugar
1/2 cup
packed brown sugar
1 egg
2 teaspoons vanilla
1 2/3 cup flour
3/4 Teaspoon baking soda
1/8 teaspoon
baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
dash nutmeg
1 1/2 cups rolled oats
Preheat oven to 350 Cream butter and sugars together until light and fluffy. Add egg and beat until smooth. Add vanilla Combined flour, soda, baking powder, salt, cinnamon and nutmeg. Stir into butter mixture. Add rolled oats. Roll into small balls (golf ball size) and flatten with glass dipped in sugar. Bake 10 to 12 minutes or until bottoms are golden. Cookie should not get brown. Cool on wire rack.

Florentine Pizza (PHOTO!)
I made this on Monday and it was so good I ate the whole thing! Naughty me. It was just too good. I used a cream cheese base because I didn't want to open a can of tomatoes just to use a tiny bit. I didn't actually use black olives, but If I had had them, you know I would have, so I included them in the recipe here.
Ingredients:
Rolled pastry
baby Spinach
1 lightly fried egg
Cheese (I used cheddar and parm.)
Mushroom
Tomato
Cream cheese
tomato puree
Black olives
Garlic cloves
Place pastry on greased cookie sheet.
Mix cream cheese and tomato puree to make enough sauce to cover base.(save 1-2 inches of edge). Slice tom. mushroom. garlic. Tear up spinach leaves.
Spread cream cheese mixture. Add thin layer of cheese. Layer of spinach, then layer or tomato, mushroom, olives, garlic. Place egg in middle. Add another layer of cheese. Bake at 190 C until crust is browning.
I ate mine with chili flakes. Yummy!

This is my succulent! I keep it near my window and blow on it sometimes. At first it was just one 'flower', but over time all the long stems have come out with 'flowers' on the ends of em! I can't wait to get LOTS of these when I grow up!

I mix:
Walnut pieces
Sesame seeds
pumpkin seeds
(insert whatever seed/nut)
Raisins!
and then do a bit of honey and/or maple syrup for a sweet taste.
The stickiness allows the tiny sesame seeds to hitch a ride with the big boys. A Great snack. It taste like dessert!

LOVERLY Raw Broc Salad
Head if broccoli, chopped in small bite size pieces
grated fresh beetroot
Chopped mushrooms
pressed garlic
Cashews
Sesame seeds (any seeds you can find actually)
chili flakes
hemp seed oil (or good olive oil)
dash Soy sauce
dash orange juice/ lemon juice

Yummy Sweet Potato Soup
And yes, I forgot to take a picture. Recipe is for two people.
1 large sweet potato, cut into small pieces
medium size piece of ginger, chopped
two garlic cloves, whole
Cover sightly with boiling water/stock
Sprinkle some chili flakes
Boil together until potatoes are soft.
Add:
one tbsp miso paste (optional)
one tbsp cream of coconut
two tbsp grated coconut
Blend until desired smoothness. Add more stock if needed.
Serve with Coriander/cilantro. Freshly chopped raw mushrooms and/or cashews. Sprinkle on some chili flakes. I served mine with a big scoop of hummus.
James thinks this recipe would be good with Cumin.
